Vegan Cashew Aioli

Elevate your dishes with this creamy and delectable Cashew Aioli. With the richness of raw cashews and the zing of garlic and lemon, it’s the ideal complement to enhance your meals.

Ingredients:

  • 1 cup raw cashews
  • 3/4 cup water
  • 2 tbsp nutritional yeast
  • 2 – 4 garlic cloves (adjust to your preference)
  • 2 teaspoons Dijon mustard
  • Juice of 1/2 lemon
  • Pinch of mineral salt, or to taste

Instructions:

  1. Place the raw cashews, water, garlic cloves, nutritional yeast, Dijon mustard, and lemon juice into a blender.
  2. Blend the ingredients until the mixture becomes smooth and creamy, which should take about 45 seconds.
  3. Taste the aioli and adjust the flavor as needed. You can add more garlic, lemon juice, Dijon mustard, or salt to achieve your desired taste.
  4. Serve the cashew aioli at room temperature, and use it as a dip, spread, or dressing.
