Ingredients:
- 2 cups rice or quinoa
- 1 cup corn
- Salt, to taste
- 1/2 cup black beans
- 2 cups lettuce mix
- 1/2 avocado
- Pickled veggies (sauerkraut, carrots – your choice)
Cashew Aioli (see recipe)
- 2 cups sweet potato, cubed
- 1 tsp smoky paprika
- Salt, to taste
- 150g cherry tomatoes
- 1/2 red onion, sliced
- 1 tbsp fresh coriander, chopped
- Lime juice
Instructions:
- Preheat your oven to 200 degrees Celsius (392 degrees Fahrenheit).
- Season the cubed sweet potato with smoky paprika and salt. Mix well to coat the sweet potato cubes. Transfer them to a baking tray and bake for approximately 30 minutes or until they are tender and slightly crispy.
- While the sweet potato is baking, cook the rice or quinoa according to the package instructions.
- In a bowl, combine the cherry tomatoes, sliced red onion, chopped fresh coriander, a splash of lime juice, and a pinch of salt. Toss the ingredients together.
- In a pan, cook the corn until it turns golden, providing a delicious crunch to your bowl.
- Heat the black beans and use a fork to slightly mash them, making them easier to spoon over the bowl.
